We’re coming at you this week with a recipe that is special to me, as it was shared by my grandmother who has been making it for years. This Spinach & Sausage Pie is super simple, which makes it perfect for weeknight meals. What makes it even better is the fact that you can easily double the recipe, serve one of the pies for dinner, and freeze the other one for another meal on a night when you’re really in a pinch.
Believe it or not, this recipe has actually caused some quarrels among my family members. My sweet grandmother often doubles her recipe, as I mentioned above, and shares the second pie with one of her children. However, it seems that she always picks the same child to share it with, which has resulted in some light-hearted discussions over who her “favorite child” is. Who knew that a simple recipe could cause so much debate?
What you’ll need for this recipe:
¾ cup Stoltzfus Meats loose sausage, cooked (Note: this is about ½ pound of sausage. If you buy our original loose sausage, I recommend adding some Italian seasoning to the sausage while cooking. Another option would be to buy our Stoltzfus Meats sweet Italian grillers, remove the casings, and cook.)
1 package Stauffer’s spinach souffle, thawed
2 eggs
3 Tbsp. milk
2 tsp. minced onion
½ cup canned mushrooms
¾ cup grated Swiss cheese
9” pie shell
How to make Spinach & Sausage Pie:
Preheat oven to 400 degrees F.
In a large bowl, mix together all ingredients until well combined. Pour mixture into the pie shell. It’s not going to look super appetizing at this point, but just trust the process.
Bake in preheated oven for 45 minutes or until lightly browned.
And that’s it! It’s so, so simple. The ingredients listed above will make one pie, so be sure to double the ingredients if you want an additional pie to save for another meal or to pass onto your favorite child.
